Strawberry-Blueberry Vanilla Muffin: An Izzy Sunday Treat [RECIPE/TUTORIAL]

Sunday’s are always the one day of the week that seems to be not so special, especially since it leads to the dreaded Monday. But I like to make it a special day so a yummy and pretty breakfast is just what the doctor ordered.

Strawberry-Blueberry Vanilla Muffin

Ingredients:

Fresh fruits and a vanilla batter is all you’ll need.

  • 1 cup fresh blueberries
  • 1 cup sliced (or chopped) fresh strawberries
  • 1 3/4 cup all-purpose flour
  • 1 1/2 tsp baking soda
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/4 tsp salt
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1 1/2 cups milk (whole milk) or you can also use buttermilk, but you will get a different texture
  • 1/2 cup brown sugar

Directions:

Preheat oven to 350° F (176° C).

In a large mixing bowl, cream butter and sugars. Add eggs, vanilla extract and half of the whole milk (or buttermilk) to the mixture, and mix.

Sift in flour, baking soda and salt. Mix well, then add the remaining cup of milk (or buttermilk). Make sure fruits are given a thorough rinsing before anything. Slice strawberries. Fold blueberries and strawberries into the muffin batter.

Now it's time to place the cupcake paper liners (cups).
